Homemade Potato Pasta

INGREDIENTS:

2.2 pounds / 1 kg potatoes, diced
1 large onion
2 tablespoons vegetable oil
2 teaspoons paprika

FOR THE PASTA:
1.1 pound / ½ kg wheat flour
3 eggs
A pinch of salt
0.4 cup / 1 dl water

Preparation

Mix the flour, eggs and salt and if the batter is too tough, add a little water. Create a ball and let it rest for a bit. Spread the batter with a rolling pin, let it dry up a little and then cut into stripes or rectangles.
Pour water in a large cooking pot, add salt and wait for the water to boil. Cook the pasta rectangles in boiling water until they surface.
In the meantime, peel, dice and cook the potato. Thinly slice the onion and fry it in oil; when it is done, remove from the stove and add paprika. In the end, add potato cubes, roughly mash the mixture and stir well. Add drained pasta to the potato mixture, combine well and serve warm.
